How was Lilo Brunch born?
Our story begins with Gaby, a young woman who discovered her love for cooking during her own vegan journey. Gaby was searching for vegan alternatives that were not only nutritious but also delicious. Her love for cooking intensified as she explored new recipes and experimented with different ingredients. Inspired by the authentic flavors and beauty of vegan dishes, she decided to share her passion with Julio and Guillermo by bringing Lilo to life. Behind Lilo Brunch's charming name lies a story of connection and meaning. Ana, the former owner of this culinary space, decided to name it after a very special tree that symbolizes the importance of family and togetherness.
The Lilac tree, also known as the tree of brotherly love, is recognized for its ability to unite branches and roots, forming a strong and resistant structure.
We loved the meaning of the name and decided to keep it to take it further.
Initially, our menu was based on options such as toast, pancakes, healthy bowls, and smoothies, which were our first culinary experiments.
Unfortunately, shortly after opening, the pandemic hit the hospitality industry hard, and we had to close our restaurant. Amid all the crazy ideas that ran through our heads, we were on the verge of selling it and giving up, but we had put all our effort into making this project a reality and we remained strong through the entire situation.
Looking for a way to stay positive throughout this situation, we started experimenting and creating new dishes that later became our signature dishes!
Today our menu features a wide variety of 100% vegan pastries, delicious pancakes, waffles, smoothies, lemonades, coffees, and much more!
It's a mystery to everyone what the true story of the bears is, and we all have a different version!
The first story tells that once Gaby and Julio had a fight and in an attempt to please Gaby, Julio brought a giant teddy bear but this stuffed animal never achieved its purpose and was abandoned on one of Lilo's tables.
The second story says that a super baby shower was planned inside Lilo's and the decoration with the bears was so great that it became part of the theme of the place.
The third story is a kind of mix of the previous ones and says that during the pandemic, when people could only sit very far apart from each other, bears were used so that no one would feel alone.
